Caesar Salad

Sharing a classic like this seems pointless, but for me, it’s the homemade dressing that sets it apart. Store bought dressings errs on the naughty-side - too much salt, fat, sugar and preservatives (not to mention colours and additives in some). I like mine fresh and slightly tangy, which is achieved here with the yoghurt and lemon juice. While Caesar salad is in no way healthy (ah hello bacon, croutons, parmesan - it’s practically a burger in salad form), this dressing eases that. Plus, it’s delicious! Dressing recipe below, because I don’t need to tell you have to make the salad.


Caesar Salad

INGREDIENTS

DRESSING

Heaped tablespoon Greek yoghurt
Heaped tablespoon whole egg mayonnaise
1 tablespoon olive oil
1 teaspoon dijon mustard
1/4 teaspoon garlic powder
1 teaspoon lemon juice
1/4 cup grated parmesan
Salt and pepper, to taste

SALAD

Iceberg
Cucumber
Avocado
Chicken
Crispy bacon
Croutons
Soft-boiled eggs
Grated parmesan
Anchovies

DIRECTIONS

To make the dressing, combine all ingredients in a jar, and shake til combined. Taste - it should be salty and creamy, and just a little bit tangy.

Lightly dress the lettuce leaves, build the remaining salad, then spoon over dressing.
