Pikelets

I’m pretty sure these are a Woman’s Weekly classic, and maybe don’t travel outside of Australia. Essentially they are mini pancakes that are the perfect snack size, not to mention weekend breakfast!


Pikelets

INGREDIENTS

1 cup self-raising flour
1/2 teaspoon bicarb soda
3 tablespoons caster sugar
Pinch of sea salt
1/2 cup milk
1 egg
1 tablespoon melted butter
1 teaspoon vanilla extract

DIRECTIONS

In a medium bowl, add the flour, bicarb, sugar and salt and give it a mix. Make a well in the centre, and add the egg, milk, butter and vanilla. Slowly stir the ingredients together until it's smooth with no large lumps.

Heat a large frypan on a medium heat, and add the batter one ladle at a time. When the top of the pikelet is covered in bubbles, flip over and cook the other side until golden. Makes around 12 small pikelets.

Serve with butter, maple syrup, honey or jam.
