Vietnamese Cucumber + Soba Noodle Salad

This is based on the Vietnamese Cucumber salad from Salt, Fat, Acid, Heat, and is a wonderful addition to a piece of fish, as the vibrant, tangy flavours balance out the delicate nature of seafood.
