Carrot and Couscous Salad

I love this salad as it can be a meal in itself!  You pretty much throw it together using whatever you have on hand - add pine nuts, hazelnuts, chopped dates, turmeric.. anything you want!  


Carrot and Couscous Salad

INGREDIENTS

1/2 cup couscous 
1/2 teaspoon ground cumin
1/4 teaspoon sea salt
2 large carrots, grated
1/4 red onion, finely sliced
1/3 cup currants
1/4 cup fresh mint (or parsley), chopped
1 teaspoon sumac
Juice of half a lemon
1 tablespoon of pomegranate molasses
2 tablespoons olive oil
1/4 cup pepitas, toasted
1/4 cup almond flakes, toasted
1 tablespoon white sesame seeds, toasted
1 tablespoon black sesame seeds 

DIRECTIONS

Place the couscous, cumin and salt in a large bowl and mix.  Add half a cup of boiling water, stir, then cover with plastic wrap.  Allow to sit for 10 minutes, or until couscous is softened, then fluff up with a fork.

Add everything else and mix well.  If making this ahead of time, add the toasted nuts and seeds just before serving to retain their crunch.  

Serves 4 as a side.
